Oil and water do not mix because of the property of
general-sciencephysics-mechanics
- Abulk modulus
- Bshear strain
- Cvolume effect
- Dsurface tension
Explanation
Oil is non-polar while water is polar, so water molecules cohere strongly with one another (surface tension) and exclude the oil — the hydrophobic effect that keeps the liquids separate. Bulk modulus, shear strain and 'volume effect' describe mechanical deformation of materials, not liquid–liquid immiscibility.
